rick, when aging in a charred white oak keg, is it the amount of time aging that we start to get that sweet whiskey smell...or should i put another ingredient into the keg while aging... thanks, scot from tx

Much of the smell and taste in whisky comes from the barrel aging, but not entirely. The other major contributing factor is, of course, the grains used and the quality of distillation. Also keep in mind that the smaller the barrel, the shorter the aging time.

So what are the aging times for say 2.5 gallon barrels and 5 gallon barrels?
