"Just received a new ""Essential Extractor"". The instruction book lists nothing about how to use the stainless chain for cleaning nor what to do with the aluminum plate. Hate to be ignorant, but i promise to help on other topics. Undergraduate degree in biochemistry and microbiology. Been homebrewing beer for 12 years.

The stainless steel chain is for cleaning the kettle if anything gets burned onto it. Simply drop it into the kettle with a bit of cool water and 'swish' it around. The chain will act like a pot scrubber.

The aluminum plate is for the bottom of the kettle to even the heat and reduce the effects of a cycling heat source.

"With the PSII and my high capacity unit and useing an external heat source. propane myself, I always leave the ss chain in the boiler. Along with a handful of gravel, cracked glass, or now a handful of rashig rings as boiler chips. A dollars worth of pennies works well also, and has some good affects as well. Insulate your collumn, and perhaps the upper half of your kettle, and you will have much better resullts.
