"Have you thought of coconut infused rum?
I'm actually working on one right now.
just a standard 25l white rum:
1kg molasses
1kg brown sugar
2 packets 1118 yeast
4tsp nutrient
enough sugar to bring 25l up to an SG of about 80.
It is almost done fermenting (4 days in) then I plan to do 1 strip, 1 reflux to 93% and then see what balance I get between flavor and purity.
If it's about where I want it I will do a standard cordial infusion (just soak it) with 1kg of finely shredded coconut, 1/2 vanila bean, 2 or 3 coriander seeds at about 55% for about 4 weeks (or to taste).
Then I will strain and filter it, dilute it to 35 or 40% and add sugar to taste.
I have never done this before but in theory it should work.
I'm hoping for a final result similar to Malibu or Bacardi Coco.
Wish me luck! I'll let you know how it turns out.
