Glad to be of service. For the record I used Mile-Hi Turbo 48 in my rum and ran the end product through my z-carbon filter. No, the filter didn't take out the taste, just the harshness.

Anyway at a NYE party last night we had a number of people do a taste test with my rum in one cup and bacardi in the other. The testers had no idea which was which. The results were 100% in favor of the handmade rum. It stood out in both taste and smoothness. Not bragging, just stating a fact. Make some and enjoy. I know I'll be making some more soon.

Interesting to know carbon filtering will not remove the taste.

Have you already experimented a little with wood-chip aging?

Actually I did. First I made some hooch using corn sugar instead of cain sugar and cut it to 90 proof. Then I took 1/4 cup of heavy toasted american oak wood chips I got from Brewhaus and put them together in a quart jar.

For the record I steamed the chips for 15 minutes before I put them in. To keep them from floating I went to the dollar store and bought a stainless steel strainer for a buck. I cut the handle off and tossed that, then formed the stainless steel mesh to hold the wood chips and keep them in the middle of the hooch.

Two weeks later I had a quart of really good whiskey. Much much better than you get with essences. Will it compete with Elija Craig 18 year old single barrel? Nah, not a chance, but it taste as good or better than your run of the mill Segrams Seven or Jim Beam white label.

For my scotch I am going to try a medium toast chip.

By the way, the quart of whiskey filled a 750 ml wine bottle quite well.
