The more I read the more things really get complicated! So here goes. Where do I use the diffuser plate that comes with the pro II High cap.? With a hot plate or gas burners?? Since I've brewed the suds before this distilling has got to me now. So what are they talking about when they say a stripping run. I plan on pot distilling before I go reflux. When using the 1500 watt hot plate whats a good starting point and How do I know if its set right?? The pots sealed?? Do I really need to rig the plate with a dimmer?? That's enough for now. I brew a dam good beer but this looks challenging???

"I've always used the diffuser on both gas and elect.
A stripping run is your first run with your proII set in pot mode. All it does is seperate your distillate from your mash, I will collect my distillate all the way down to 30%abv. which is usually when the temp at the top of the column is about 95 degrees cel.
When you refux, keep your hotplate on high and use the water flow at the top of your column to control the temp.

To go a long in this vein, when using my hi-cap in pot still mode is it necessary to remove the copper packing? I made some schnapps with the packing in & it seems to be OK.

I don't use any packing when I'm doing a stripping run, but on my second run in pot mode I will use the copper mesh, I use a combination of copper and ceramic when in reflux mode.
