"I am wondering if anyone has used cane syrup to make a nice rum. I know mostly everyone uses molasses but cane syrup is molasses before it becomes molasses.
If you have ever had in any in your fridge it crystallizes into sugar with a little brown liquid. It smells just like brown sugar and molasses too."

"As far as I understand, cane juice/syrup contains both what eventually becomes molasses and ""white sugar"". Brown sugar is sugar that was not fully purified leaving some of the molasses element in it. ""clean"" molasses is mostly a by product of sugar manufacturing.
So theoretically using it will be the same as mixing white sugar and molasses as your base wash.
Anyone out there able to verify this?"

anything with sugar in it will have a long expiration date, since micro organisms cannot survive in them. One thing you may get on the top, which is usually found on top of maple syrup, is mold. http://www.brewhausforum.com/sh...read.php?p=8710#post8710
