"Hi Folks,
I ordered a PSII HC, I am an experienced dark beer and stout brewer and have dabbled in wines. Can I start with any fruit wine mash/wort and then put it in the PSII HC in pot mode and make a good spirit assuming that I do everything correctly in the distillation process?"

Yes, makes a nice eau de vie/grappa. Cut the collections with purified water to 40% abv. You can add back a little fruit juice for color & taste, but most drink it as is ( 40%)."
