Ive made them with wine yeast and bakers yeast but it wil require the addition of acids and nutrients but as a winemaker I always have all this stuff on hand all the time. I must say that the other yeasts take a little longer but come out cleaner in my opinion but if doing neutrals using both columns and full reflux there will be no difference in the end result.

I use the black label yeast for all my sugar washes and they turn out great.
