"Anyone have thoughts about this?

I've read the homedistiller.org info. Sounds like Shamwow to me. Increasing yeast activity on sugar by lowering the ph?

sham (sham)n. 1. Something false or empty that is purported to be genuine; a spurious imitation. 2. The quality of deceitfulness; empty pretense. 3. One who assumes a false character; an impostor: ""He a man! Hell! He was a hollow sham!"" (Joseph Conrad). 4. A decorative cover made to simulate an article of household linen and used over or in place of it: a pillow sham.

It has to do with making the sugar more 'presentable' to the yeast. Of course it depends upon the type of sugar one is using, corn sugar doesn't really need inverting, but it helps table sugar become easier for the yeast to convert. A little acid mix is cheap anyway.

Never tried it w/o the acid since it was cheap & easy to get. I use hard limestone well water (no chlorine) & it works just fine. I always cut with purified water.

Heard its best to add the acid after the sugar has cooled back down, probably around the same time you add the yeast, to prevent some bad things from happening.

Only for a non boil situatuion. As posted above, adding acid to a hot sugar mix makes for a faster and cleaner wash.

Adding it to a non boil wash, you are trying to get the ph down to levels that the yeast are happy with. PH papers are nice."
