Use a pot still unless you are going for a neutral spirit.

I lived in Caribou, ME while I was kid or Air Force brat. Some mean kids out in month long summer. With sugar or corn wash's a pot works fine."

Pot is nice and simple...my homemade one hasn't done me wrong for my peach and peach/plum mashes...granted, I'm moving up to a PE2 still, because i want the capability for reflux and pot (and I just don't feel like building one again right now). if you can do pot, and fit in the capability to easily retrofit for reflux, you'll really give yourself options.
also, I personally wouldn't do it on the stovetop in the kitchen....move it onto a hotplate outside or in your garage. that's just me though, others may prefer it in the kitchen

Yeah, build your column so you can easily add a section for refluxing. Then you can do both.
