Rick:

I just ordered some Oak Chips from you. I'm hoping I get close to the same results as putting my stuff in a barrel. How many oak chips should I use for a gallon, and how long should I leave the hooch in the chips for it to do it's magic?

The amount of oak to use and aging time vary greatly, depending on the desired final result. As a base, I would suggest about 1/4 cup in a gallon of 65% abv ,maximum,, and start smelling / tasting after 2-3 weeks.

Sorry just a couple of more questions. First, do you need to do anything to these chips before using them, ie:wash them/steam them? Next, to make scotch do you need to char them? Then lastly, can you re-use them afterwards and if so how many times?

We have distilleries using the chips as is, but if you wish to char them I would suggest the Oak Stix, as they are larger, and therefore much easier to char. You cannot reuse the chips, as unlike a barrel you have much less actual wood involved.
