have been distilling for some time and have been using stainless coke kegs with charred white oak for aging. have recently came upon a 30 gal barrel. got it all filled up and was logging how much was added periodically for the angels. i was figuring on about 2%. but, my goodness, ive gone way beyond this amt. how do the big boys handle this? also would it be better to use cut or uncut stuff in the barrel? i know different percentages will pull different flavors out of the oak.

Fiddler, Is that 2%+ total volume, or 2% ABV? How long and how hot? Most recommend 60 to 62% for kegging. Some like to age at that ABV for a period of time, then cut to a weaker for a period of time, then cut again for a period of time. This gives the full range of flavors, just as I do with chips or sticks. Did you first saturate the barrel with water for several weeks? If not twould be a reason. How many angels can dance on the head of a pin? In your case not many. They are going to fall off with a big smile on their face. "

Pretty important too, what is the brew? Used or new keg?

the barrel was saturated...was emptied, prior to me getting it, about 3 days prior. there is no leakage..... have just topped it off, will go a week and give you a reading on how much the angels have consumed in that time frame.

"Fiddler, Great keg for rum, scotch, irish etc. At least if used once? Anyhow, just as a suggestion, I would put in appropriate amount of toasted or charred white oak to match what your brew is. Since you are not bound by law on this issue, you can cut your ageing time dramatically. There are other and quicker ways to oxygenate it if necessary. Let the angels dan :coolhave their share, after you have had yours! "
