In the book making pure corn whisky the first cook method calls for flaked maize with strike temps around 160. The second calls for using corn meal at near boiling temps, I bought 50 lb's of cracked corn (says all natural). Which cook temps do I need for this? mtnwalker could you e-mail me at xrayyou21 yahoo.com, I'd like to send you some pictures and ask you more questions if you have time and patience.

I would never be able to get that much sugar to ferment out in only 5 gal. of water, whith any I have ever used. Care to share what kind? Mine would stich sure as anything if it even ever got started. What % ABV are you getting with this wash?"

Isn't it roughly 2lbs sugar to 1 gallon H2O? So 10 lbs sugar to 5 gallons of water?

"I use StillSpririts Express Turbo Yeast, and have tried different amounts of sugar. If you can keep the mash at room temp 72f it will take aprox. 5 - 7 days, and when distilled reflux I get one gallon of 160 proof. That workes for me. If anyone has more input please pass it on ! Merry Xmas.
popapina"

The "power turbo" seems to work with 20 lbs. of dextrose according to the web site and can yield as much as 20 % in 7-8 days.

For cracked corn, you need to boil at a simmer for a good while, and it needs almost constant stirring to keep it from scorching. A morter mixer on a drill works well for this. I cheat. I use a 22 qt. pressure cooker with a false bottom screen. Boil water and pour the corn in and seal it. 15# for 15 min. works great. Thinking I am going to try some of the gallon cans of sweet corn, that I can get real cheap at a discount grocery here. Mash or blend it up a bit and then do the mash enzyme conversion. Worth a try once i guess."
