"I'm wanting to improve a run of dark rum. I'm working with a 15.5 gal beer keg with internal reflux head system In the past I've used 15 lbs. sugar 1/2 gal molasses and the rum yeast. cook and carbon filter that at full strength then add a baking molasses and vanilla. I've just bought the dark rum essence and was wondering how to apply and how much. or more recipes for dark rum based on the 15.5 gal system. Thanks Turtle"

"Firstly, best tool for the job would be a potstill. Are you de-tuning your column? Second, why are you carbon filtering rum? You are stripping out true flavor profiles only to re-install an,,,,,addative? Adding a touch of molassas, vinilla or some caramelized sugar can be helpful get your taste (and color) close.
