"I Have a few Tricky Questions on Rum for the Professionals .
Ive been recently Distilling Rum from a Kit you can purchase that has all ingrediants included(IE...Mollassis,Sugar,yeast ETC).
The Instruction say use Pot Still, make your cuts then Take till ABV 60-61%.
Store on Rum barrel Shavings for 1 week to month or as desired.

My Questionis after reading a lot of info on here about making cuts and doing Stripping runs is,,,

Could I do a stripping Run on this to improve quallity ?
Would I Strip all including Heads,Hearts and Tails ?
How far % would I strip to ?
Would I Dilute Strippings with water or Dunage on the final Run ?
When doing the final run would i still stay in pot mode and take to ABV 60-61% like Instructions state ?
Should I be collecting the Rum oils and re-using them in Final Run ?

Any help with these Questions would be a Great Help.

"Some Gents that run potstills prefer only one run. Low and slow. The only thing that I would prefer once thru would be brandy I recon.

Stripping first will allow you to shed the bulk of the water very quickly (if you push enough heat with out puking). Then your second run should be diluted to at least 40%. Running twice will make your cuts easier and offer a crisper cleaner drink IMO.

When stripping, collect everything.
The jury is out on weather to toss fores on the strip run. Some do, some don't. I did. But now I don't. I recon you can run your strip run as low as you have time for. I take mine down to 20% or less depending on time or......

I used to charge my boiler with a quantity of nicely cleared rum wash with my low wines to ensure a good carry over of flavor. I run a thumper now, so i like to charge the thumper with the wash and a bit more molassas if I have any left over.

I like to age at 60 to 70% with aligator chared oak, A Pineapple core, chared dried dates (or appricotts),raisins. I previously installed some strawberries as well. This was to ensure a nice red tone. But a Gent suggested that the strawberry would turn my likker brown. Did not happen as the rum did not last long enough. But, if I had enough to age for 2 years I recon I would leave out the strawberries."

If you went down to 20% on your first Stripping run, obviously you would not need to add dunage or dilute as it would of carried through most flavours and be below 40%? is that correct

Would you on the final Run save the Rum oils that come out between 40%-20% to be carried over? and also carry the heads and tails over as well?"

Yep. I would typically add everything (cept fores) back to the forthcoming spirit run.
