"Hi all again,
I have done my 2 stripping runs on my Rum Wash and added both of them together. I plan to add the baking soda but was unsure as I want to add some dunage to my Stripped run for final distilling but wont be doing the spirit run for 2 weeks as I have to go away.
So my question is should I keep my Dunage seperate from my Strippings and baking soda and refrigerate the dunage.
Or add the Dunage to my Stripped Run and the Baking Soda and let sit for 2 weeks?"

Jimmy, I would only add bakeing soda if I were going for neutral. And definately wouldn't add it if I were going to use dunnage. Too much chance for ammonia and such when distilling.

"MJ, You are correct. Add it to your stripped low wines. Dilute them to 50% or less.

The BS will react with some of the offs in those releasing more good eth. and leaving a non distillable reactant of ill smelling and tasting yuk.

It makes the cuts more easily defined and cleaner hearts."
