"I have been having trouble with stuck fermentations.
I know I'm pushing the limit, but according to what I have read, I should be able to achieve 18% with a Super Yeast. I use the 5.2 pH adjuster, the liquid carbon, Distiller's nutrient, and this SuperStart Distillers Yeast from Canada.
I add 20 lbs of Sugar and top to 25 liters, giving a potential alcohol of 18%.
I have an aquarium submersible heater that keeps it at 79 degrees.
It usually sticks around 10 Brix, at which point I have tried yeast energizer, and the volume doubling from a starter culture method to restart. I would like to not have it stick and restart. Any ideas?"

Actually, 20lbs of sugar in a 25L wash calculates to just over 21%abv. This is quite possibly beyond the tolerance of the yeast, especially if there is any other stress to consider.

Split into 2 - 25L buckets & top off with water or maybe a 10 gal trashcan (food grade). Adjust your SG to no more than 1.080 & pitch some more yeast.

I also so am having trouble with fermentation used sweet feed and sugar with Turbo yeast 48 bubbled like crazy for about 3 days on the fifth it has slowed to nearly nothing is this normal

If you chuckin the same kinda sugar quantity into the feed wash then yes it would be common. You pushing to much sugar on your yeast. Even the turbo can keep up. I can only imagine how gawd awful that hooch must taste.

Bring it down to 10 or 12% (or lower) if your tring to do a grain wash. You will get a far superior result,,,,,,,,,,just not as much yeild. Don't be so greedy.

Get your self another fermenter,,,,,make more hooch and slow down so you can make good drinks that you can be proud of and confident to serve to friends and family members."
