I am sure this is a stupid questin but I just recieved my new PSII and it came with a large flat silver disk. There is no mention of it in the manual and I assume it goes between the kettle and heat source but I wanted to be sure. Thanks for any info offered.

The part that you are referring to is the Diffuser Plate, and yes, depending on your heat source it goes between the heat source and the base of your kettle.

Ratflinger is correct. Keeps things from scorching when using propane. However..., not needed for a sugar wash. ...use only if you're using a grain, fruit or ??? in your boiler.
