"Hello all,
I tried searching for this answer but after 3 hrs found only tidbits.
If there is a thread that deals with this problem.... point me to it and my apologies.

I am on 2nd run of a WSSW started at 1.06 got down to 1.01 in 2 days so I decided to feed it. (20l original 8lbs sugar...feed 2 1/2 lbs more sugar toped off at 25l) had to stir it up and added some sodium carbonate (Washing soda) to bring PH up to 4.8 from 3.2)
Now the color of the wash has gone from a dirty blond color to almost brown...plus some funky white (Cheato's) looking things are floating on top.
Smell isin't bad but not as good as first run.....

I have 4 x 25 liter washes going... the one on far left shows the most symptoms...(lots of white cheato's) the one on far right seems normal (no cheato's yet).

Wineo says I can cover it loosly so I'm not using air locks...
All will be strip run then treated with baking soda for 1 week then spirtit run.
Just going for neutral spirits till I get some experiance under my belt.

Questions
1.) How do I know if I have a Bacteria infection?
testing..not just looks and smell
2.) Can I fix it?
3.) should I through it out?
4.) what is the easiest way to prevent one in the future?

"Personally, I like to cover it with a fermenting lid. If doing an explsosive ferment like wheat germ,and actually any others, I put a 4 folded paper towel over the airlock hole and a quarter on top to hold it down. Any cloth over the top, can get wetted from the bubbling in a fast and active ferment, build mold in a short period of time, like moist bread left out overnight. Also, if its the least bit open weave like cheescloth, a fruit fly will just dive in, and infefect with vinegar bacteria. If whatever those things, cheatos?, are fuzzy, its mold. Other wise I would say its bacteria. Read where there is a white bacteria that eats all the alchohol in wines and renderes it like water. If you don't use internal electric elements i would run it and be done with it. Really sterilize your fermenter afterwords. Everything like racking tube, and spoons, vinometer etc. Kill all spores.

Hope someone can shed better light on this.

I thought it might be Wineo's * sugar wash.I've done Wineo's econo wash. I will look it up. I searched homedistillers site and found references but not the recipe. I will look again.

Wineos Plain Ol Sugar Wash or WPOSW

Followed to the letter with the exception of feeding it cause it finished so fast (3 days) and the addition of sodium carbonate (to adjust PH to 4.8 to 5.0)
