where u live is the name of the game but for good measure ,hell you aint runnin shine I hope so you want the best for you,use distilled water it shouldnt be too hard to come by with your still and all!

most of the time tap is fine. preboiling to sterilize remove chlorine and settle some solids is generally a good idea. If the water is ok to drink it is probably ok to ferment.
