"I just ordered the PSII high capacity and 1500 watt hotplate.
I have 10 gallons of apple wine which will be my first runs.
From reading this Forum this is my game plan.
Run 5 gallons in pot mode. Toss foreshots. Collect down to about 20%
Do the same for the 2nd 5 gallons.

DO I DILUTE THE OUTPUT OF THE FIRST 2 RUNS WITH WATER HERE?

Make a 3rd run with the results of the first 2.
Toss foreshots.
Collect 200ml per jar
Cover with coffee filter and let sit overnight
Taste/smell each jar the next day.
Determine the hearts
Keep other than hearts for future neutral run
Add toasted oak to the keeper product
Should be good to drink in about 4 weeks

I hate to waste so I never toss the foreshots. I save them and use them in a couple of alcohol burning novelty gadgets. They make a nice blue/orange flame and don't cost like buying fuel for the flame gadgets :)"
