Wondered if anyone had any input on water to use when making a wash. I'm doing a sugar wash and have used city tap water before. This time I bought some gallons of purified spring water to make the wash. Is there any benefit from using distilled water, purified drinking water, tap water? I dont have access to a Kentucky stream.

I dont have access to a Kentucky stream. I recon you need the minerals that are in tap water. Throw a tsp of Gypsum & citric acid in there too. Little DAP couldn't hurt either. If you are concerned about the chlorination in the tap water stir it briskly and let it set a day. The chlorine will dissipate. I only use purified water to for diluting my high %ABV spirits." |

"The water is everything when it comes to likker. The big guys claim that the water is 80% of what makes their whiskey GREAT. Now guys like me and you that dont have access to Kentucky or Tennessee h2o have to make due with whats at hand. As long as you dont have chlorine from the city water or not much anyway it will work from what I've found. I have bought h2o and it worked fine -- but I use reverse ossmosiss water from my sink now and that does not kill the yeast. (Zero impurities) Keep in mind that water you buy is city water in a container that has been chlorinated to sterilize it, but how much is the question. I bet if you boil your water for conversion of sugars -- that will get rid of some of the nasties too."
