have been brewing for a while now but have decided to try filtering my hooch. it taste great before but filtered it becomes watered down. I soak my charcoal first, pour water down (I use the stainless steel filtr) top let it filter out the my hooch, it comes out watered down what am I doing wrong?

Do you put your product into the filter when the water has drained down to the very top of the charcoal? If you primed the filter with hot water do you follow the temperature change all the way down the column to the bottom? Did you get a strong alcohol taste prior to the start of collecting your filtered product?

let water drain did not use hot water, how do you follow tem down the stack ? hoock comes out watered down and very slow

if I put a quart of water after thge hooch had drained into the stack I got a waterd down quart of hooch

I use hot water so I can feel it drain down the column and know when to start tasting it. My filtered stuff usually comes out about the same speed as it does from the still. If you pack the column by tapping it too much it can take a day for 3 gallons to filter. I don't tap the column at all, did that once and it took forever."

I don't know how much product you filtered but it is better to save it up until you get around 2-3 gallons and have that cut to about 90-100 proof. Then if you get a little water mixed during the filtering it doesn't make much difference.

Also if you followed the procedure for starting the filter you shouldn't have a problem. If you didn't fill the column with water before you started adding the charcoal that will cause a problem. If you let the column get an airspace between the water and the alcohol that will be a problem. Same with letting the alcohol drain to the top of the column before adding you last bit of water to drain the column when you are finishing. I use hot water for that too so I can feel it work it's way down the column.

"Carbon or charcoal will hold more water or hooch than you might think. If you pour water down the tube and you dont get an idea of the amount you just poured through it by catching it on the other end you cant get a read - of the amount left in the tube. Pour in a pint and see how much you get when its done running??? You'll see the carbon holds a pretty substantial amount. But thats ok just compensate for it.
Pour your water, catch until it stops, now start your hooch --- catch whats coming but know it not hooch yet. Its still the water so taste the drip or run until it likker -- you;ll learn the amounts of each."

Just as dive4gold says, save up a gallon or 2 before you filter so a little extra water wont even be noticed. The hot water before thing --- thats what I do every time too. And it seems to work fine.

You will not need hot water if you carbon is "clean" as soon as the product follows the H20 down the tube, the division point will become quite Hot to the touch, When the heat heaches the bottom, so has the product.

Basically what I do is get two 3 gallon kettles of boiling water going. Once they start boiling, I remove them from the heat and pour one of them down the tube. This heats up the tubing which helps outs when you're filling it up with your carbon. Tap the tubing with a rubber mallet as you fill it with your carbon. This makes it ultra slow, but it also makes an ultra smooth whiskey. Remember the old saying, the slower you run it, the better your liquor comes out. Next, slowly pour the other kettle of boiling hot water through the carbon. This will remove any excess ash and lose oils that may be left over from where the carbon was acid washed. Once the filtering system has stopped dripping completely and you have no more boiling water to pour through it, add your spirits. After you get done filtering your spirits, pour another kettle of boiling water through the filter system again. This will push what alcohol is left out of the carbon and make it ready to be re-used.
