"I've been on the EasyStill for the last year and just upgraded to an Essential Extractor from Brewhaus and am getting a wonderful 150-170 proof runs. While I am absolutely thrilled (I was only managing 70-80 proof in the EasyStill), I need to figure out how to get this down to a manageable proof so my friends don't kill themselves! I do grain whiskey with aging. So I am wondering if anyone has a suggestion about whether I should water it down after it come out of the still or if I should wait until after it is aged and then water it down as a whole or wait and let people water it down to taste.
I love having this problem but want to make sure I don't lose a batch figuring this out.

I proof mine down to 140 to 150 proof before aging. I read that it helps leech out all the flavors and colors better. After about a month or two, I delute to 90 proof and add some cherries, rasiens and apricots, let that sit for another month. But that's just me, there are a lot of different ways and styles.
