"Yeah thats normal...and 180 proof is pretty good. It will go down cause your extracting the ethonol and as it gets less and less, the proof will go down and the temp will go up (and thats normal) thats why they say stop collecting
195-200degrees. You've gotten into the tails and water is coming next. All stills are different and you have to get yours figgered out. Use your nose and your hydrometer.
I usually get about 2.5 - 3 qts of good hooch for conditioning from a 5 gallon wash. If your cuts are real tight maybe only 2.5 for drinkin."

"I had 3 liters of 45% product. I added glycerine to all 3 bottles. To one I added apple chips. To one I added toasted oak. To the other I added toasted oak and part of a vanilla bean. That was on 12/24. All 3 have been in and out of the freezer and in the heat about 6 times. Last night I tasted the one month old with the apple. It was smooth and wonderful.

I am now stripping some apple wine. I am thinking of adding apple chips to one liter, toasted oak to another. Then add some apple slices to each. I am wondering if anyone has tried this and how it worked?

I am also wondering how long you leave the oak and apple wood in the product?"

Use your eyes - your nose - and your taste buds. Its all up to you as to what you want. Does it smell good and taste good - if so its a homerun, KWIM.
