"I used to put mine in the fridge and never had a prob. But the stores that sell it only store the liquid yeast in the fridge. The dry ones sit on a shelf until we buy it, but I bet it wont hurt it if it stays dry. I bought a big bag of brewers yeast and I put that in a tupperware jug in the pantry and I havent seen any change. Oh, just make sure you rehydrate it before you add it (or make a starter) and that will tell you if it still viable."

We keep ours in the freezer - both for this & baking. Never had a problem.
