"Ok it's been a while. But I haven't been inactive. I've been fiddling around trying to get rid of what I can only consider or call a ""liquor bite"" feel to the drink.

I've watched temperatures. I've maintained the process through out from beginning to end. Thinking that it may be something with the way I made the mash. I got buddies that make their mash the same as I. I've done unfiltered and filtered both pre- and post- cutting to lower percentage. This is all for neutrals of course. Which I then flavor. But flavored and unflavored: I still get that 'bite' to it.

I'm comparing my product to that of my friends. Which may be a bad thing to do. But I can't help but feel that 'mellowness' to their product when I drink it; as compared to that 'bite' I get when I drink mine.

I'm not entirely to sure how to describe that 'bite'. But it's sort of like drinking limoncello? If that makes a bit of sense. Kind of like: Full flavor taste, then bam! A sharpness that hits you.

My production process is the same as my friends, except my still is 5 liters and theirs much bigger. We run the mash once for product. And the stills are both reflux.

Any idea what this is that I'm trying to describe?"

"Sounds like you are running a smaller still.

The smaller the still,,,,,the harder to make cuts. The more heads that bleeds into your hearts, the more ""bite"" you will have in your product.

"When you only have a gallon and some to work with the amount of wash good hearts is going to be pretty small. Like LWTCS referenced with heads.... dont keep everything that comes out of the still in the same jug. You need to make cuts but I'm not sure you can with that amount of product??? Still -----start off with a small collection cup, like 50 to 80 mls or so. Dont combine them until you havea chance to givera good sniff in the morning.
With 5 liters of wash you should only have 2 or 3 cups of hearts to work with. You might even have to try to collect in 30 to 40 ml cups. Cant hurt to collect small and combine later."

"Linkway...when I run my setup I run 5 gallon at a time. Now with that in mind I toss out the first quart that comes out into the collection jar, (that would be the heads-thats probable the bite you mention) Then I start collecting for the cuts to be made. Again, I see you use a smaller still so adjust accordingly. When I'm done with the run the GOOD hearts part of the run is only 2 quarts or so. And you'll know that by the smell and the bite. Oh and the end smells pretty shitty so you'll know that part too.
So 5 gallons wash...2 qts hearts
5 liters wash...2 cups hearts, I'm not sure thats exact but I'll bet its pretty darn close.

"1/3 of the total boiler charge will likely be collected (rule of thumb only)

Up to you to figger how much to keep.

Like the man says,,,,collect with small jars to isolate yer good likker from the bad."

"I'm keeping that in mind on the next batch / run. I've been separating like this so far: 50mls head, then three separate cups of 200mls each.

I was assuming (and that's probably what I get for assuming) that the 50mls worth of head was enough to get rid of. I haven't put any thought to the tails end, as I only collect almost 600mls after throwing out the 50mls of head. I stop the run after the 600mls and discard the rest.

I'm going on a shopping run though with your suggestions, and get some more 50mls and 100mls containers. To help divide the product more.

I haven't been doing any stripping runs. I took it at face value since my friend (with the bigger still) doesn't either and doesn't get the bite in his drink."
