Once I have a nice clear neutral wash ready for distillation, is it typical to do a stripping run and then go at it again? I've never used a still of this sort and I was wondering if this should be necessary?

Yes, run a fast stripping run (wide open heat, no packing) and keep everything up to about 90c - 92c. Then take that & reflux it slowly with full packing. Let it reflux for at least 30 min before you lower the water volume and start producing. Toss the first 100ml & collect until the abv drops to around 80%. Now you are into the tails & taste will let you know when to stop. Let this stuff air (covered with cheesecloth) for a couple of days, cut to 40% & enjoy. If you think you have dorked it up, just re-run it.
