hello, is it ok to use bakers yeast for for a wash.... been looking around my neck of the woods and we don't have any brew shops...

yes you can, in fact many use bakers yeast even though other options are avaiable. Just keep your sg at 1.09 or below as 12 per cent abv is about all it will do without problems. Hi ABV washes usually have other problems especially those used with any turbo yeast.

I'd say 10 to 12 is best but I've pushed to 14 and not had an issue with the ever so slightly more sulfer smell that goes away after airing."

I agree. But I never try to exceed 16%. So much faster and balanced ferment. Settles and clears fast. I always strip then spirit run and always get 95.6 or close %. Very clean. Easy.

I use the High Capacity column, and that pretty much fixes everything anyhow, if run right."

But final product quality is always an issue (IMHO).

Not pushing your ABV means cleaner final product.

Cleaner washes mean cleaner spirits. Cleaner spirits mean. Better likker.

Rather,,,,,get another fermenter (or two) from Brewhaus and cycle your batches so that something is fermenting while something is clearing and something is ready to charge the boiler.

Don't be greedy while making cuts.

Do these things an your likker will likely be better than most any store bought.
