"Been looking everywhere and cannot find a god recipe for apple or pear cider.
I make spirits and wine, though never made beer and it seems to me more like a beer making process.
Anyone have a good recipe for cider, something good from scratch, including the fruit preparation and how to keep the yeast just happy enough to get a good fizzy drink but not blow anything up in the process?"

Very much like a wine process. You will find some nice recipes and guidance at Fine vine wines forum. Check them out. Personal guidance there as well."

Yeh, go there. Im a mod there and they have a wealth of people who make anything you can think of for wines and will gladly give you their recipe. I have not made to many ciders myself.
