"Been doing this few months now with no major problems.
On the Gert Strand Turbo yeast packages and other brnds I've used. They seem to usually talk about ""ambient"". Which I take to mean room or air temp. I do monitor the wash temp, thinking that it's more important? Isn't it?
My wash temp. I've been running at 83-86F. No problems, with Turbos the batches finish faster. 18 Lb Sugar with Turbo 48 usually is done in 76 hours. The wash ends being ~18%. By being done I mean the SG is corect and no more gassing."

Excellent Rick, I have run more than a hundred runs with the same 48 turbo and never a problem. Yes, ambient is room temp. YOur wash could exceed that though as the fermentation also creates some heat. Never gets that hot here so can't answer, but have read from some that that high a temp can introduce some off flavors? Yeast stress from the heat, and they recommend some colling affects. You will be the best judge of that for yourself though. Every one has slightly different results. Average ambient, high and low temps can vary over the given time for the wash to average out.
