I need some enlightening on this subject,I can`t taste any difference after I throw out the first 5 ounces on a 5 gal run. I run my still on a 40k natural gas burner that came out a hot water heater. The first few ozs come off between 160 and 170, then the temp stays at about 175 for about an hour and when the temp starts to go above 180 the % goes down, after all that I keep and then water it down to 80 proof it always tastes the same regardless if my wash is made from wine or corn. Im using good well water, no chemicals and I`m doing pot still mode, I can do reflux, would the product be any better by doing a strip run and going to reflux on the next run? My question is how much hearts is in a 5 gal. wash? I`ve tried tasting in the middle of the run and there`s no difference in the taste when its all said and done. Am I running it too fast? How do you get the slow process, turn down the temp? rcm243

"Hi RCM. First, you will definately want to do a stripping run. Collect it all, and then dilute to 45% or so and then do your stripping run. Collect in beer bottles or such only 2/3 full and numbered. Let air for 24 hours or longer, than dilute a teaspoon to taste and smell. Keep records as this will teach the the cuts for that individual wash mash. Useing a pot still, if its still not to your likeing you can do a third run, like they do with Irish Whisky. Less flavor each time, but milder, smoother, less bite.
later when you have learned the cuts and taste and smell fractions, you can cheat a bit and use a tad of reflux. But if you are after grain or grape flavors, work the pot still untill you know what you want and like it.
As to how much hearts, no one could answer without your original and final specific gravity readins, or at least what you fermented and did the ferment finsh to a very dry and non sweet finish?
Those that want a full grain flavor will shoot for around 6 to 8%. Others useing turbos and sugar will go for 15% or more. Wine is what it is.
