I have heard it is best to store in fridge, but I never have. i keep mine in a cool dark closet, on the floor in a good cardboard box, and have never had a problem. 1090 is fine, if the PH is good. I have made many sour mashes with this yeast, and have found as the acid level builds, the ferment gets really slow as the yeast is stressed. After adding the backset, test and adjust the PH and no problesms. 1090 won't give you as good a grain flavor as say a 1080, but a bit more alcohol. Its a balance. Your choice."

"The owner of this site told me 1 year in the refrigerator is good, just take it out before hand to raise to room temperature before using. I just looked at a bag of 48Turbo and has an expiration date of 11/11 and I bought that 6 months ago. I also noticed that most of the store bought packets have a 1 year date too, I just bought some distillers yeast and it say 6 months.
Most of the turbos when made by instructions come out at 1090, I have reduced that and all my other recipes to 1080. No need to be greedy as it sends me to the bathroom every time."
