"Hello all,
I'm new to the forum, so here's a little background:
I'm a chef, I've had a passion for Italian "" Amaro"" (bitter liqueurs) and sweet vermouths ever since my studies in Italy, and have been making them as a hobby for the past 5 years. My previous method was to by everclear, dilute it to 100 proof, macerate with herbs and spices for 10-14 days and then re-distill with a homemade pressure-cooker-pot still, and blend to liqueurs.

Well, I've decided to start taking this hobby a little more seriously and purchased the EEII, premium kettle, which by the way is a beautifully crafted piece of art.

My sugar wash is bubbling away, I've already done a leak check and water run with the still, and hours and hours of reading. My question is in regards to insulating the tower, I've seen pictures of people wrapping their column in aluminum foil? I was under the impression that the cooling of the tower itself would aid in slowing down the vapor, and result in a slower more pure spirit production. My goal is to run some very pure spirits first, then macerate, and break it down to a pot still for my final run.

please enlighten me on insulating the column?

That is not aluminum foil you are seeing. it is Reflectix 16" x 25' R-3.7 Double Reflective Foil Insulation and Shurtape 2.5" x 50 yd. HVAC Foil Tape. Both avalible at your local LOWES.

It is recommended that you insulate your column to insure consistent temperatures.

"insulate your boiler too--it will save you time and energy. i bought my insukation at home depot. it has sticky back and i went around 3 times. i also used plastic ties on the tower and aluminum duct tape on the boiler
