I am thinking of running some distilled water

"I want to test one of my stills that i just converted to electric-- i installed a 1650 watt heater element and i just recd a router controll in the mail yesterday-- it would be a chance to test both items.
But actually i am wondering about storing the distilled water. I want to make 3 gallons.
Actually i have more than one question.
1-- When i run the distilled water should i just run it as hard as i can.
2-- can i store the distilled water for months by treating it with sorbate and sulfite.
I would be keeping it in a 3 gallon carboy that is filled to the top and sealed with a cork and then i would coat the cork with wax to seal it to the carboy opening.
Any comments or suggestions on this??????"

You will run as a pot distiller, and can run very quickly as water does not have a large amount of contaminants at a relatively close boiling point to that of water. I am not sure why you would take clean, distilled water and add chemicals back to it, as that defeats the purpose. Distilled water does tend to go 'stale' after a while, and given how fast you can distill a few gallons of water I would suggest using it within at least a couple of weeks of distilling.

totally distilled water is not my actual goal.
i store my fermented wash this way as though it were wine. then i can run it at a later date.
i was thinking of having some stored water. it is not a necessity actually because my tap water is excellent for diluting spirits.
it was just a spontaneous thought. probably not practical.
however the question still lurkes in the back of my mind.
Would the treatment keep the water drinkable????"

Probably easier to go to Walmart & buy distilled water. Your distilled water would not need treatment, but it's the container, etc where you might add contaminates
