"Basically I'm trying to make my operation more efficient. I've got 6 fermenters running and as much as I try to stagger their starting & finishing times but ultimately I usually end up with most/all finished and waiting for distilling.

So I'm thinking about getting a large food grade storage container/tank of some sort, as each are ready for distilling I can fill up the backup tank and put the fermenters back into work again straight away. Efficient also because I can produce a better quality spirit quicker in Summer (I'm in Australia) than I can through Winter so by having a backup tank (which will end up getting full at some point) gives me premium wash to distill through the otherwise under productive time of year.

Any suggestions, does anyone else do this? Obviously I will need a food grade plastic, we're only talking about storing 12-18% ABV so I'm hoping that's not strong enough to leech plastic. I'm wondering if a plastic grey water tank would meet my needs. Massive, cheap and tap already built in."
