I agree - if you ran it down to a SG of 1 then there is minimal residual sugars and plenty of alcohol for stability

i treat my wash with sulfite and sorbate-they last just like wine.

Run it and see what kind of volume you get compared to a fresh wash. Your C2H5OH should be fine. I was curious about any evaporation that might have happened without a air lock.

Very little evaporation. Will cook it up and use my wife as a tester.
