im looking to buy 1 of the 8 gal 2'' premium or induction kettles but i dont know which to buy and could someone explain what an diffuser plate is? i allready have a essential extractor psII tower . i was just going to use a beerkeg a friend of mine had but that setup looks like a major pain in the rectum to clean could anyone please help?

I've own one of the 8 gal premium pots works real well with the diffuser plate.( a heavy piece of aluminum that helps diffuse the heat into the stainless pot) the diffuser plae is not attached to the pot you just set the pot on the plate. It fits in an indention in the bottom of the premium pot. The only complaint, I should have got the 13 gal.
