"Run everything you collected again, mixed with about 2L of wash. After the first 25-35ml, put your finger under the drip and taste it. When it evaporates on your tongue, your collecting good liquor. After 2-2.5pints, it'll start to taste different, bitter and more watery. Change containers and continue to collect until until it tastes mostly watery. Keep the 2-2.5 pints to drink, and dump the rest into your next full batch of wash. I usually get 800-900ml of 135-145 proof liquor. The easystill is basically a pot still, so you still have to make cuts, but unlike a still where you control the temperature, the temperature in the easystill rises slowly and steadily, so the temperature doesn't fluxuate as much. If you notice the difference in taste and smell as you run it, you'll figure out what to keep and what to dump. Practice makes perfect.:)"

Here is the basics as I understand it. The chemicals that vaporize at the lowest temp. are methanol, acetate, and a few others. This starts at 160F. As the temp. rises ethanol starts to vaporize. At 180-185F most or all of what you're getting is ethanol. As the temp. rises more, you continue to get ethanol, but you also get other chemicals(carbolic acid, denaturized acytl something or other, etc...) This continues to about 208F. by the time the temp. gets to 212F, you are getting water. If you just collect the first pint, then you'll be getting good ethanol, along with those other first chemicals (heads. ). If you then turn it off, you'll miss lots of good ethanol that is still coming out. If you drink the last pint that comes out, your getting hangover causing chemicals with your ethanol (tails.) What you want is the mostly ethanol that comes out in the middle (hearts.) With a small pot still, like an easystill, it helps to run it all the way through, then dilute it and run it again to get a higher ABV outcome. Because the easystill is so small, I like to dilute with more wash rather than water to maximize how much I end up with, in the end. These other guys with there bigger stills dilute with water and run it again. What you end up doing is up to you."

"Just a tad more info on that subject....its true -- with the temp thing but remember the ratio of chemicals to water!!!!! 98% of your wash is water. If you had pure ethanol and you heated it to 178F it would vaporize right there but with the ratio of water to hooch it takes more heat to get the water hot enough to vaporize the ethanol thats availiable and as the ration changes thats why the temp continues to rise. Your not really getting the ethyl-methyl bad shit until you get a real high temp, much higher that we will ever go. Theres more nasties down in the beginnings of the run than we get in the end. Remember we rerun tails but not heads or foreshots -- no good hooch in the first runnings.:)"
