"I did read the threads I could find on using [COLOR=""DarkRed""]backset[/COLOR] in the run wash. I'm using the sugar recipe and have almost 3 gals of backset from my sacrificial run. I'm confused as to what stage this [COLOR=""DarkRed""]backset[/COLOR] is added to the new wash. Is it used instead of the 25 L of water in the recipe before fermenting is started? Or added after the new wash has fermented? I'd really appreciate some help here.

The next 3 runs I do will be in pot mode then I'll combine and do a reflux run. At least that's my plan so far.

"ccz...go to the rum recipe section and I think you'll find your answers. But just a quick note----backset isnt for a neutral its for a rum wash. It gives a extra flavor careover and assists with ph in a wash.

I have to assume you stilled your 3 runs hard and fast,(stripped them) and then your gonna reflux them??? Thats cool, once combined and refluxed it'll really clean up your finished hooch.

Of course any grain backset or slop can be added to the next fermenter to get a flavor careover in the next run too."

"Blushingyou used the term ""sacrificial run"" was that the cleaning run of your still?? If so maybe you should just discard all that and make a new wash for keeping.

The usual answer as to when to add your backset is after you still and get all the ethanol out of your boiler (whats left is backset or slop) then you take from your still and add to your fermenter a certain amount (usually 25% of your total wash) about 1.5 gallons for most, Then start another wash with that.
So if you just put in 1.5 gallons of backset on top of your new sugar your gonna then top off with water and when its cool add your yeast and start the fermentation over. If you have rum wash nutrients use them.Tongue"

If your goal is a neutral I wouldn't bother with any backset as it will just add flavor as heeler explained.

That said, take a look a ""uncle jesse's simple sour mash method"" in the tried and true recipes on HD. It has lots of information you will enjoy.

I cant tell trying to use the stuff helps much. Will testify it can mess up a ferment right quick if a person uses too much. If it adds a flavor its overwhelmingly the flavor of tails. I now dump it out in the yard where it belongs.

For now I'm just trying learn the process and am going to be using just a straight sugar was not trying for any flavoring. Anxious to see how my stripping runs on the sugar wash and final reflux run does. Thanks to all, again.

Ok..give Birdwatchers/Bayou Rulers tomato paste neutral a try sometime..if you aint already. Makes a mighty fine neutral. Not a bit of use in recycling the dunder on that type of stuff.

I'll give that one a try. I do have it bookmarked. The one I'm using now calls for sugar, tomato paste, DAP (which I can't find locally) and is optional, and baker's yeast. I'm heading to beer brewing store today to see what supplies they have. I'll ask about the DAP. I ordered a glass carboy from Amazon which is really nice but I think I'll see if they have the plastic ones. Will see if there's any difference between them. Would like to have 3 batches fermenting at once."

Ok sounds like you are following the recipe mentioned. Sure glass would be better than the plastic models. You can usually snag the plastic jugs at most big grocery stores. Last I got was six bucks each. Sure they have went up now.

I don't use DAP with my BW washes, but I always add 1/4 tsp epsom salts (22 L wash). Never had a problem yet.
