"Ok, I started with UJSSM a few weeks back and have a question for those who run sour mash. In your experience when does the mash ""peak"" as far as flavor and return is concerned? What I've read says it gets better up to around 6 or 7 runs, if you add a little more corn to your mash. I know lots of you keep notes, as do I. My first run had a heavy corn smell, tasted ok, but the second run is a definate improvement.

I did some generational runs with SF. The operation seemed to fully derail itself by run 4. Flavor kept getting better and better but the volume when to heck. Think run four maybe coughed up a quart but it tasted real good. About halfway convinced I managed to slowly kill the ferment with the added dunder. Somebody say to keep close watch on the PH which I think would be an excellent plan. If a person kept that aspect under control it may could go on forever.
