what the best proof to age on wood chips??? i've got 4lt aging with 45%,90 proof, for 10 days then will be adding a little flavour, this is what the brew shop told me... other details, reflux still using z-filter do you need to use z-filter,before aging, if you going to age with wood chip as i would think the chip will take or mast most flavours, reflux does pretty good job anyway, i'm still new to this as i've only made 3 batches so far, all with good results... so much hand information!!! thanks

I am currently using a reflux still and I also use the z-filter after diluting my product. This seems to make a better product. As aging I have read that it does not make a difference if the product is diluted before or after diluting. Aging I feel helps mellow out the finished product. I beleive that the bourbon distillers do not dilute before aging in barresl the dilute after aging that way the can get more product in the barrel.
