"I started an UJSM on Sept the 8th the very next morning it was already bubbling away. Now four days into it it's bubbling like a champ. I am using the ""slow"" ec-1118. Wonder if i should give er a good stir when it slow down a bit, say next week?

Last night I mixed up a corn meal sugar wash and this morning I added the Turbo Yeast (trying something new). I went back home for lunch and it was already bubbling loudly. I may be cookin this weekend...

sure give it a good stir --wont hurt a thing might do some good by rouseing the yeast and sugars back into floatation!"

ec1118 is not really slow-- it is just not a turbo however-- you will not get better neutral than with ec1118

Please tell me how you aerated your wash :)

Well with the UJSM I stirred it several times that evening then pitched the yeast stirring that for a bit too.
with the corn meal I heated up about 2.5 gallons of water mixed in the sugar to dissolve then I poured that over the corn meal stirring it as i poured the hot water in. Once I did that I used the sink sprayer and filled the rest of the bucket with cold water. I continued to stir it a couple mins at a time about every few minutes. Then i let it sit over night. I check the temp of the wash this morning it was a cool 72. I let it sit a while longer and when i came back home for lunch I stirred it up again and mixed in the yeast of course stirring that in as well for at least a min.
Either way i've never had an airlock bubbling as fast as this one is going. It sounds like a fish tank air stone, I mean she's a rockin. The UJSM is rocking too but not has hard as the corn meal wash.
My last wash with ec-1118 was still going after 17 days, but keep in mind that it was sitting in my dining room in an climate controlled environment so my a/c was going.

Thanks i believe i will when i see it start to slowing down. I'll probably get another reading on it before i give her a stir. Thanks for the input.

Yeah i'm workin on getting it going I need more hooch i'm about out. lol I hadnt ever stirred anything either once its on lock down (from my old beer brewing days) But i may try to stir this ujsm next week if it slows down by then. Yeah i know all to well about wort showers, I've had one as well. back in the day the wife wasn't very happy. now there ain't no wife so life is good, still don't wanna make a mess though.
Good luck with your sugar increments. let us know how that turns out. Ive read a lot about folks doing that.

I noticed this morning (Sept 14) that my Turbo Wash wasn't bubbling anymore nor was my corn wash with ec-1118. I opened the lids on the buckets and got an SG reading of .098 on each one. So both batches are ready. I was hoping for another week on the corn wash with ec-1118. I'll be cooking the CM wash tomorrow and probably the corn wash Sunday. How long does this keep at room temp before cooking? Could I add sugar to keep it going a bit longer. I'd rather cook one 5 gallon tomorrow and the other 5 gallon next weekend. Thoughts....

My corn meal wash smell like pure ass, it has a very sour smell to it. It does not smell anything like the corn wash that I have? Is this a normal smell for the corn meal wash/mash? I was getting everything ready to get up at crack thirty in the morning to start cooking but i'm wondering if this smell is the normal. Keep in mind the sg was .098 now and 1.050 when I started. I used a turno yeast.

That is true heeler, Im gonna go charge up the still and cook this milky poopoo smellin wash. I doubt that i'll ever use turbo yeast again. but we'll find out in a few hours.
