Ok, after some rethinking, mostly financial, and a weird desire to build it myself, decided that a middle of the road approach is more my style right now. Going with 3 gallon still, 1", 18" high, column feeding 1/2" downtube to a 3/8" worm. Keep in mind I'm using materials I have on hand. Also in the equation is a nearly nonexistent budget and hardware stores that are sadly under-equipped in the copper department. Make do with what I got. I'll let you know how it turns out.

So now that being said, is there a safe way to bond my copper column to the stainless lid of my cooker? I don't have access to a welder, never mind someone who knows how to weld stainless. I was thinking there may be something like JB Weld available that would be safe for this. Any ideas would be much appreciated. It's Saturday night and I'm building my still, not drinking from it. LOL

LOL Hey curt, If you take a look at my still in the "Essential Oil" section you'll see I also used a 1" riser. I soldered my pipe to a 3/4" male thread/1" female slip reducer then bought a 1" female thread to slip and cut the female thread part off for the nut. Used a couple of number 20 metric stainless steel washers and some home made gaskets to mount to the lid. Works real well. There are some better pictures of the parts in the "Projects" area.
