what proof before aging and would it be better to use a cork in the top of bottle for aging....
i know chip make it smooth and stuff, but do you still need to carbon filter before wood chips??? will the chips remove most of the bad stuff???

and i know, what ever i do, don't put it through
the z-filter,carbon, after the wood chips, it'll remove all the taste..

i've had 4lt in 2 bottles aging for 10 days at 45% proof, the brew shop said thats all i need,plus a little flavour,.

Ace, If you don't carbon filter, the wood chips will not remeove the bad taste and smell if you have it. The chips,give it a mellow oak flavor but does not remove the baddies. I age my product in chips before I cut it, so it is at the proof that it comes out of the still. This seems to work for me, but I do a lot of cordials and white liquors not bourbons or whicskys, little rum, but thats it. hope this helps...Jimbull
