I have two pints from my last UJSM run that I put some toasted first then charred white oak chips into. I'm going on week 3. It's got a very nice tint to it. My question is how long should I leave the oak chips in the jars? I don't have any problems removing them or leaving them. I've not ever charred any hooch before so i thought i'd try since i had some to spare. If it's no big deal to leave the chips in there then i'm gonna do that and take the two pints out to the garage, cause for me out of sight is out of mind. I'm afraid they'll get drunk up sitting in my cabinets.

Well the ONLY way to know when its ready is to taste it.....the color may be right but we really dont care what it looks like ya know....so every now and then ya just gotta taste it and when its where you want it - remove the chips and THEN seal it and save it.

Using white oak cut 1"x1" deep char 6"long. Placed in one qt. jar fill with shine one tb spoon real maple suryp to take the edge off and let set for 6mo. Remove wood from jar and filter with coffee filter. Find a very good friend and injoy. Some of the best I have ever sent past the lips. You have got to let it set for it to get real good.

Thanks 24racefan, I didn't know that about the maple syrup, good idea. I may try that with my next batch. I'm trying to oak char one pint per wash.

Honey works well also, but I run through the coffee filter after the chips soak for a month or so before adding the honey

You can also use glycerin. Any of the three is supposed to work to improve "mouth feel". Such an odd term.
