You must have areason for wanting it???? What is the PH of your water now before you go change it with gypsum. Why wheat for vodka instead of a sugar wash?? Im not contradicting you , I just am very curious as you did not really tell us anything.

You could beat a piece of drywall to powder - hmm maybe not. Should be able to get it at a brew shop.

It's Calcium Sulphate. It'll lower your mash pH. Plus the calcium is useful to the yeast and various reactions. You can get it at most brew shops ... or do what rat suggests and dig into that drywall - LOL.

When you get your gypsum, pick up a container of pH test strips (they're pretty inexpensive). Then you can do what scotty suggests ... and measure your pH before you decide if the gypsum is necessary.

thanks guys. Now that I know what it does i know I do not need it. I have done a straight sugar wash and wanted to try potato or wheat. since my favorite store bought is only Spelt wheat I am trying wheat just for giggles. Next will be a sweet feed whiskey and then potato vodka. it is great to have a plan. I was going to make a comment about the extra sheet rock in my garage but left it out. Darn!!!

Ya I've read that potato vodka is a lot of work for little gain. Sounds like my current job so I am used to that. lol. It will be at

the least, interesting. I did not know what else to call the sweet feed product. What would it be?
