I have 5 pounds of flaked maize. What would be the best recipe to use it for and do I need to add boiling water to it for 90 mins like the sweet feed recipe?

5 lbs of corn isn't going to do much unless you want to pitch sugar with it. My suggestion would be search for Uncle Jesse's Sour Mash recipe and use the flaked corn in place of the cracked corn. If you are only going to use the grain you will need to boil it and you will also have to use some malted barley to convert the starches.
