I am an experienced wine maker, new to this. Just ordered still, Turbo yeast etc. I wanted to get the mash started and used my wine knowledge such as sterile equipment, 25 L water, 8 kg sugar. It's not fermenting yet after almost three days. Either I'm impatient or something I did isn't right? I put the sugar into a 25 L glass carboy,plastic pail primary is for lees so I went right to glass, filled up jug upto 25 L mark with warm water, 20 something C, I always do it to touch, just like i make wine. Stirred it to dissolve, and I had no Turbo yeast so I added one package of wine yeast. I definately have floaters in there,which I read I shouldn't. So impatient or what is it? What is going on here?

Yeast is a living organism, and as such needs nutrition. A sugar wash does not offer the nutrients, minerals, and vitamins that the yeast needs to survive and do its job, hence no fermentation. You will need to either use a Turbo Yeast, or add the nutrition that the yeast needs.
