I think I have enough fores and tails to run them. I'm running a psII in reflux mode. These are collected from three sugar washes. Do I need to add water to the kettle to keep it from running dry? What should I expect? Same amount of heads, small middle run and a lot more tails?

Anytime you add a high proof liquid to the kettle (heads & tails or a stripped wash) cut it with 50% water. You should run it dry as the heads & tails aren't 100% anyway. I usually add the previous heads & tails to the next strip in reflux mode. It's kind of an endless thing, I have a 5 gal carboy that I keep the heads & tails in, the next strip goes into the carboy also. Then back into the kettle with equal amount of water & reflux away. Heads & tails back into the carboy for next time.

Welllll, I threw out the first 8oz or so from each run, that smelled like nail polish remover, and I was considering the next jar or two that still had a little smell to them the fores.

"just a little deffinition correction..the first 8oz you tossed was the foreshots...and yes toss it.
and the next jar or two, well that was the heads, lots rerun that I dont but you can if you want.
Remember it comes in this order....foreshots----heads----hearts----tails----water."
